The yolk is the most nutritious part of the egg

Most people think that the yolk is bad as it contains a lot of cholesterol. However, this is the most nutritious part of the egg as it is very nutritious when it contains antioxidants, vitamins such as vitamin A, folate, choline, lutein and trace minerals

Egg yolks contain calcium, iron, phosphorus, zinc, thiamin, vitamin B6, B12 and panthothenic acid too besides the fat soluble vitamins A,D,E and K.

As for the cholesterol content in the yolk, your body will down-regulate its internal production of cholesterol to balance things out. However, if you do not consume enough cholesterol, your body will still produce more cholesterol because it has lots of functions in the body.
